In 2018 we have returned our brewing focus to IPAs and Farmhouse ales. Our goals this year are variety and experimentation within these styles. We have also started our barrel program. Here are snapshots of our IPA and Farmhouse Ale programs:
In March, we established two IPA series' for production: our American IPA Series and our New England IPA Series. We believe IPAs are at peak quality when consumed fresh so we brew smaller batches with more frequency to ensure this. Our labor is your reward.
We are focused on two Saison recipes for the year 2018, along with variants of each.
Saison du Labaddie (a new version of our Batch 1: Saison: Belgian yeast)
Saison Heure D’été (a new version of our Batch 10: Saison: French & Belgian yeast blend)
We are also exploring and experimenting with other Farmhouse Ale styles which you can expect to see on tap in the coming months, including Biere De Noel, Grisette and more!
We began our barrel program in June 2018, with wine and whiskey barrels sourced locally and nationally. We have several Brett and fruited variants of our Saisons in wine barrels and a variety of styles in whiskey barrels that are currently aging. Our first releases are expected over the winter.

Saison Du Labaddie - 7.1% ABV - Unfiltered Belgian-style Saison brewed with Hallertauer Mittlefruh hops. Brewed using only malt, hops, yeast and water, it has hints of clove and spice and lots of fruity esters.

Dry Hopped Saison Du Labaddie (Hallertau Blanc) - 7.1% ABV - Our Saison Du Labaddie dry hopped with Hallertau Blanc hops. These add flavors of white wine and gooseberry with complex aromas of cassis, elderflower, grapes, grapefruit and lemongrass.

Dry Hopped Saison Du Labaddie (Amarillo) - 7.1% ABV - A variant of Saison Du Labaddie dry hopped with Amarillo hops. Expect orange/grapefruit citrus aroma and flavor with hints of clove, spice and fruity esters from the Belgian Saison yeast.

Oak Aged Saison Du Labaddie - 7.1% ABV - This variant of our original Belgian style Saison was aged on Missouri white oak spirals. Along with the earthy, peppery spice from the Saison, the oak provides hints of coconut along with fresh oak and a slightly fruity contribution.

Saison Heure D'Été - 5.8% ABV -Unfiltered Saison brewed with Hallertauer Mittlefruh hops & a French & Belgian yeast blend. Dry & crisp with spice and clove up front and a mellow tartness in the finish.

Saison Heure D'Été with Brett - 5.8% ABV - Our first variant of the Saison Heure D'Été was fermented and aged with a combination of a popular farmhouse saccharomyces yeast and a brettanomyces bruxellensis variant. Look for a bit of funk and fruit character in addition to the hints of clove and spice from the base recipe

Batch 1: Saison - 7.1% - This was the first beer we brewed on our 15BBL brewhouse. Unfiltered Belgian Style Saison brewed with Hallertauer Mittlefrueh hops. Brewed using only malt, hops, yeast and water, this beer has earthy, peppery and spicy notes.

Batch 4: Saison – 5.8% ABV – Unfiltered Belgian Style Saison with fruity ester characteristics and a light tartness. Brewed using only malt, hops, yeast and water, this Saison's esters are balanced with a slightly malty finish, light clove flavors, and mild spicy and floral notes provided by Crystal hops.

Batch 10: Saison - 5.8% ABV – Unfiltered Saison brewed with Crystal hops and a French & Belgian yeast blend. Dry & crisp with spice and clove up front and a mellow tartness in the finish.

INDIA PALE ALES
Goodle Day IPA - 7.4% ABV – Our tribute to John Hartford. Brewed using Centennial bittering hops, and Cascade and Mandarina Bavaria aroma and dry hop additions. Balanced, unfiltered, earthy, floral, tangerine, grapefruit, citrus.

NE IPA El Dorado - 6.8% ABV - New England style IPA hopped exclusively with El Dorado hops, with plenty of rolled oats for a smooth mouthfeel. Tropical fruit reminiscent of pineapple and mango, pear, watermelon and stone fruit.

American IPA Eureka - 7.4% ABV – Balanced West Coast style IPA brewed with Centennial and Warrior bittering hops and Eureka hops for the aroma and dry hop additions. Earthy, floral, spicy, citrus, pine, stone fruit, mandarin and peach.

NE IPA Citra – 6.8% ABV - This hazy New England style IPA has plenty of grapefruit, lime and tropical fruit. Very low bitterness and a smooth mouthfeel.

NE IPA Mosaic – 6.8% ABV - Hopped exclusively with Mosaic hops, this smooth, hazy IPA has notes of mango, pine, citrus and herbs with a pleasant tropical and stone fruit aroma

Goodle Day IPA with Citra - 7.4% ABV - This variation of our flagship Goodle Day IPA includes Citra hops for the bittering addition. Along with the Cascade and Mandarina Bavaria hops used for the aroma and dry hop additions, this beer has notes of citrus, grapefruit, subtle pine and a nice malt balance.

American IPA Warrior Cascade Citra - 7.4% ABV - Brewed with Warrior bittering hops and Cascade/Amarillo dry hops. Expect citrus/spicy bitterness with a floral, grapefruit/orange citrus and pine aroma and finish.

American IPA Idaho 7 – 7.4% ABV – This is the 2nd in our rotating series of American IPAs. This single hop IPA was brewed with Idaho 7 hops. Used in the boil, whirlpool and for dry-hopping, these hops impart a balanced bitterness with notes of pine, orange, tangerine and black tea in both the taste and aroma.

Azacca IPA – 7.4% ABV – Brewed with solid grain bill for overall balance and Magnum bittering hops for a clean upfront bitterness. Late boil additions and dry hopping with Azacca hops add a tropical fruit aroma and finish.

Black IPA - 7.4% ABV – This unfiltered ale is brewed with de-bittered dark specialty malt to add color and light roasty chocolate malt notes. The Magnum bittering hops add clean balance and citrus, while the Cascade hops aroma and dry hop additions provide additional notes of citrus as well as some earthiness, grapefruit, pine and herb.

Wee Heavy w/Vanilla Bean - 10.3% ABV - Matured on Tahitian and Madagascar vanilla beans. Rich malty caramel, cherry-chocolate, vanilla, toffee, dark fruit, anise and light roast complexity.

Irish Red Ale – 6.4% ABV – Unfiltered, Irish-inspired red ale. A copper-red color with a touch of caramel sweetness and toasty, biscuit malt. Styrian Golding hops provide balance and a subtle resinous and earthy aroma.

American Stout – 7.9% ABV – This traditional stout is roasty with malt-provided hints of chocolate and coffee. Combined with the dark, roasty specialty malts, Chinook hops provide a balanced bitterness and subtle piney spiciness.

Weissbier - 5.2% ABV – An unfiltered wheat beer created with the traditional German style in mind. Brewed with a small amount of Hallertauer Mittlefruh hops, the majority of its flavor is imparted by the yeast, which produces hints of banana and clove during fermentation.

New Moon Porter - 7.8% ABV -A medium-bodied, unfiltered robust porter with hints of chocolate. A smooth, dry finish and low bitterness for an enjoyable all-season beer.

Batch 8: Wee Heavy - 9.4% ABV - Unfiltered, malt forward strong Scotch Ale with hints of roasted malt and caramel sweetness round out this medium bodied, low bitterness classic European style beer.
