In 2018 we have returned our brewing focus to IPAs and Farmhouse ales. Our goals this year are variety and experimentation within these styles. Here are snapshots our IPA and Farmhouse Ale programs:
In March, we established two IPA series' for production, our American IPA Series, and our New England IPA Series. We will have one new IPA release per month, alternating between our NE IPAs, and our American IPAs. Each IPA released will run for 2 months, being brewed twice during its run to keep the beer at its freshest state for consumption.
We are focused on two Saison recipes for the rest of the year 2018, along with variants of each.
Saison du Labaddie (a new version of our Batch 1: Saison: Belgian yeast), and
Saison Heure D’été (a new version of our Batch 10: Saison: French & Belgian yeast mix).
We will release variants of both of these beers throughout 2018, starting with an Oak Aged Saison du Labaddie, and a Saison Heure D’été w/ Brett in April. Look for locally fruited variants, and barrel aged variants of these beers later this Spring and Summer. We will be also be releasing Saison du Labaddie in 16oz cans this summer.

Saison Heure D'Été - 5.8% ABV - 30 IBU - Unfiltered Saison brewed with a French & Belgian yeast blend. Dry & crisp with spice and clove up front and a mellow tartness in the finish.

Batch 1: Saison - 7.1% - 27 IBU - This was the first beer we brewed on our 15BBL brewhouse. Unfiltered Belgian Style Saison brewed with Hallertauer Mittlefrueh hops. Brewed using only malt, hops, yeast and water, this beer has earthy, peppery and spicy notes.

Batch 4: Saison – 5.8% ABV – 30 IBU – Unfiltered Belgian Style Saison with fruity ester characteristics and a light tartness. Brewed using only malt, hops, yeast and water, this Saison's esters are balanced with a slightly malty finish, light clove flavors, and mild spicy and floral notes provided by Crystal hops.

Batch 10: Saison - 5.8% ABV – 30 IBU – Unfiltered Saison brewed with a French & Belgian yeast blend. Dry & crisp with spice and clove up front and a mellow tartness in the finish.

INDIA PALE ALES
American IPA Idaho 7 – 7.4% ABV – 64 IBU – This is the 2nd in our rotating series of American IPAs. This single hop IPA was brewed with Idaho 7 hops. Used in the boil, whirlpool and for dry-hopping, these hops impart a balanced bitterness with notes of pine, orange, tangerine and black tea in both the taste and aroma.

NE IPA Citra – 6.8% ABV – 45 IBU - The first in our hazy New England IPA series. This is a single hop beer double dry-hopped with Citra. A big, juicy aroma, minimal bitterness, and a smooth mouthfeel from the use of flaked wheat in the grain bill define this style.

Azacca IPA – 7.4% ABV – 65 IBU – Brewed with solid grain bill for overall balance and Magnum bittering hops for a clean upfront bitterness. Late boil additions and dry hopping with Azacca hops add a tropical fruit aroma and finish.

Black IPA - 7.4% ABV – 73 IBU – This unfiltered ale is brewed with de-bittered dark specialty malt to add color and light roast-y chocolate malt notes. The Magnum bittering hops add clean balance and citrus, while the Cascade hops aroma and dry hop additions provide additional notes of citrus as well as some earthiness, grapefruit, pine and herb.

Goodle Day IPA - 7.4% ABV – 68 IBU – Our tribute to John Hartford. Brewed using Centennial bittering hops, and Cascade and Mandarina Bavaria aroma and dry hop additions. This balanced, unfiltered IPA has earthy, floral citrus bitterness with floral, tangerine and grapefruit notes in the aroma.

Irish Red Ale – 6.4% ABV – 26 IBU – Unfiltered, Irish-inspired red ale. A copper-red color with a touch of caramel sweetness and toasty, biscuit malt. Styrian Golding hops provide balance and a subtle resinous and earthy aroma.

American Stout – 7.9% ABV – 80 IBU – This traditional stout is roasty with malt-provided hints of chocolate and coffee. Combined with the dark, roasty specialty malts, Chinook hops provide a balanced bitterness and subtle piney spiciness.

Weissbier - 5.2% ABV – 14 IBU – An unfiltered wheat beer created with the traditional German style in mind. Brewed with a small amount of Hallertauer Mittlefruh hops, the majority of its flavor is imparted by the yeast, which produces hints of banana and clove during fermentation.
